Apricot Creamsicles

Creamsicles get an Okanagan facelift with this fresh apricot version!  You can use any fruit you want of course depending on what is in season, all you need is a blender and your favourite popsicle forms!  You can skip the first step if you wish, you may just get a darker puree.  Use whatever yogurt you wish, dairy-free or otherwise!  You may need more or less yogurt depending on the size of your popsicle forms.

Ingredients

  • 5 apricots
  • 1/3 cup peach, mango or apricot juice
  • 1 teaspoon fresh lemon juice
  • honey to taste (optional)
  • 1.5 cups vanilla or coconut yogurt

Instructions

  1. Prepare a medium bowl of ice water and bring a small pot of water to a boil. Submerge the apricots for 30 seconds and immediately place them in the ice bath.  The skins should peel off easily with your fingers.  

  2. Cut each apricot in half and remove the pits.  Place the apricots along with the juice and lemon juice and blend on high until smooth.  Taste the puree and add honey to sweeten to taste if desired, blending after the addition of honey if you add it.

  3. Layer the apricot puree with the yogurt in the forms until they are full, being careful to work any bubbles with a chop stick or butter knife.  Place the sticks in your form and freeze for 3-4 hours or until completely frozen.  Run the bottom of the forms under hot water to help release the popsicles and enjoy!
