Strawberry Breakfast Popsicles - such a healthy fun way to eat breakfast that the kids will LOVE!

If you want to feel like an ABSOLUTE rockstar mom and have the kids feel like complete rebels, make these Strawberry Granola Popsicles.  I promise these will be their favourite way to start a day, and you’ll be happy knowing they are super healthy!

We love smoothies in our home, but sometimes you just need to switch it up.  With the warmer temperature setting in (yay!) and mornings being as busy as ever, I love having these Breakfast Popsicles on hand for a quick but healthy breakfast or snack for the kids that they absolutely love!

We make our own granola and always have a jar of it kicking around… it’s so easy (here’s my all time favourite recipe for my Top Secret Granola [1], but this coconut one [2] is also absolutely amazing – just leave out the freeze dried strawberries).

The best thing about this recipe is that it is super flexible. You can make them vegan with a vegan yogurt, add whatever granola you want, and even mix it up with fruit!  We often do this with leftover smoothies to help reduce waste.

Strawberry Breakfast Popsicles

Creamy greek yogurt, fresh strawberries, and crunchy granola come together to make the perfect popsicle for breakfast.

Ingredients

  • 1 cup vanilla Greek yogurt
  • 1 cup sliced fresh strawberries
  • 1/4 cup almond milk (or other milk)
  • 1 teaspoon lemon juice (freshly squeezed)
  • 3/4 cup granola (approximately)

Instructions

  1. In a high speed blender, combine 2/3 cup of the yogurt, the sliced strawberries, almond milk, and lemon juice. Blend for approximately 1 minute or until thoroughly combined.

  2. Divide the mixture into popsicle moulds, filling each about 1/2 full, and place in the freezer for 1 hour.

  3. Remove the popsicles from the freezer and add a layer of granola to each popsicle, leaving room at the top. Add yogurt to fill the remaining space in each of the popsicle forms. Place in freezer for a minimum of 6 hours or until completely frozen.
