Spiked Peach Coconut Hibiscus Popsicles

These beautiful Spiked Peach Hibiscus Popsicles are quick to make, not too sweet and the perfect sunny weather treat … just in time for May long weekend!

I partnered with Pure Leaf  [1]to create these dreamy treats for celebrating patio-style with friends on those hot summer days ahead, and was thrilled with how they turned out! First, I can’t get over how pretty they are!  We previously used the Pure Leaf Mango Hibiscus Tea in a Tropical White Wine Sangria [2] and it was so delicious (another perfect summer entertaining recipe that’s super showy), so I was excited to integrate the iced tea into another creative recipe.

I really like the simplicity of what goes into the Pure Leaf Iced Teas [1] and the fact that the teas get their colour from brewed fresh hibiscus flowers.  They are naturally caffeine free so that they can be enjoyed any time of day.  The Peach Hibiscus Iced Tea ended up lending the perfect amount of sweetness without making them too sweet (such is the case with most store-bought popsicles in my opinion), and each popsicle is only 40 calories assuming you get 10 popsicles like I did (depends on the size of your mold).

The yogurt makes these popsicles creamy and compliments the flavours of the Pure Leaf Iced Tea perfectly. We tried a traditional Greek yogurt as well as a dairy-free option and both are incredible (I actually preferred the dairy free yogurt for the record). If you only have coconut milk at home and want to give it a whirl in place of the yogurt, simply substitute the yogurt for ½ cup of coconut milk and add the peaches as per below which will prevent the separation.

While you can make these without the alcohol, the peach schnapps and coconut rum gives the popsicles a lovely peachy/coconuty hit of flavour. If you do choose to leave out the schnapps and rum I would suggest adding 2 cups of frozen peaches to help prevent the mixture from separating.  Of course, since these do contain alcohol be sure to keep them out of the kids’ reach.

Lastly, we had to really hunt for peaches to add to the popsicles as pictured… it’s a bit early for local peaches!  In the height of peach season I would recommend sticking a peach wedge inside of the popsicle form before pouring in the mixture (so pretty).  It’s completely optional so no need to wait for peach season to have these beauties!  Serve the popsicles on a platter of ice like we did to keep them frozen as long as possible before they reach your (soon to be very happy) guests.

Spiked Peach Hibiscus Popsicles

These Spiked Peach Hibiscus Popsicles are so beautiful and absolutely delicious! Lightly sweetened, vegan and gluten free, these are a summer weekend must!

Ingredients

  • 1 bottle Pure Leaf Peach Hibiscus Iced Tea
  • 1/2 cup sweetened coconut flavoured yogurt (either vegan coconut yogurt or Greek yogurt works)
  • 2 ounces peach schnapps
  • 1 ounce coconut rum
  • 1 fresh peach, cut into wedges (optional)

Instructions

  1. Blend all of the ingredients together in a blender on high for 30 seconds. Pour into the popsicle molds, (add a wedge of fresh peach before pouring the mixture in to the molds if desired) and freeze until solid, about 8 hours or overnight and enjoy!

Recipe Notes

To make these alcohol free add 2 cups of frozen peaches to the blender before blending and omit the alcohol.
