There are few things more Christmasy (not a real word, I know) than a glass of eggnog. I created this vegan eggnog recipe for my cousin Jillian last year and it was a huge HIT, our crew preferred it over the traditional stuff (it’s also on Jilly’s site here … she has SO many great holiday ideas if you haven’t already checked them out)!
Lighter on the calories with the same amazing nostalgic flavours of the real deal, I have no idea why we only make it once a year! This recipe simply couldn’t get any easier: just throw it all in a blender and serve! Which leaves you more time for wrapping … which I should probably start at some point!
One-Step Vegan Eggnog
Eggnog gets a healthier overhaul with this vegan twist on the holiday classic - and it take virtually zero effort!
- 3 cups vanilla soy beverage
- 1 cup full-fat coconut milk
- ¼ cup maple syrup
- ½ teaspoon cinnamon
- dash cloves
- ½ teaspoon nutmeg
Blend all of the ingredients together in a blender until frothy. Pour into 4 of your favourite small glasses and garnish with a sprinkle of cinnamon. Add rum if you’re so inclined!
