Breakfast Popsicles

Feeding kids (and some adults) at breakfast can test the patience of any mom, and I’m no exception. We eat a lot of fruit parfaits around our house, but even those can get old for the little ones. Now popsicles on the other hand: those NEVER get tired.

Enter the breakfast popsicle. Layered with Greek yogurt, granola and pureed fruit, they are as simple to make as they sound, and will land you the ‘cool mom’ award of the week when you serve them up! Of course you don’t have to be a kid to love these. I served them to my husband’s work crew when I was testing the recipe on a hot summer day, and they were a major hit!

All you need is a popsicle form and a few ingredients. You can use any fruit you want (fresh or frozen) and can mix up the yogurt flavours. I tried a few variations after raiding the produce and dairy sections of Nature’s Fare Markets [1].  I simply mashed up fresh raspberries for my first batch, and also tried it with mixed frozen berries which was equally delicious. Coconut yogurt with pineapple? Or how about a vegan yogurt (found in the same section as the traditional yogurts at Nature’s Fare Markets) instead of the traditional yogurt? Why not!

There are some terrific granolas at Nature’s Fare Market [2] that you can grab off the shelf, or if you’re feeling ambitious you can make your own. I’ve shared my Top Secret Granola recipe [3] recently that I used (just be sure to finely chop the nuts) but beware; it makes a LOT of granola!

You may need to adjust the quantities below for your popsicle form depending on their size. Mine hold approximately 3 ½ cups total volume, so the recipe is created with this in mind. This one is more of an art than a science, have FUN!

Directions:

  1. Mix together the granola and honey in a small bowl.
  2. Divide the pureed fruit equally among all of the popsicle forms, followed by the granola & honey mixture and last, layer in the yogurt to the fill line of your popsicle forms.
  3. Insert your sticks and place in the freezer until completely frozen.
