Banana Bread Pancakes

There’s no better way to a man’s heart than through his stomach … and these Banana Bread Pancakes will get dad’s day off to the best start!   I mean, who doesn’t like a tall stack of fluffy pancakes first thing in the morning, right?

Making pancakes is a regular family affair at our home on the weekends, and the kids are always involved… as messy as it is (it’s so worth the mess for the record)!  Max is an especially colourful addition to the kitchen… his fun little demeanour is the best (Charlie is such a rule follower, and Max… not so much).

The kids and I wanted to make Banana Bread Pancakes for Charles before golf today and this is our recipe.   It is so awesome finding ways for Charlie and Max to learn to cook using tools like the Vitamix that make it easy breasy (with a little help from us of course).  Now, if only there were something that made cleaning up that simple!   

You can use regular all-purpose flour instead of whole wheat flour if that is what you have on hand – but of course the whole wheat flour is more nutritious!  A gluten free flour blend like Bob’s Red Mill should work too if you want to make them gluten free.

Banana Bread Pancakes

Fluffy whole wheat Banana Bread Pancakes that are made in the blender in one step - making it so easy for kids to help create them!

Prep Time 10 minutes
Cook Time 15 minutes
Total Time 25 minutes
Servings 10 pancakes

Ingredients

  • 2 ripe bananas peeled
  • 2 cups buttermilk or any milk combined with 2 tablespoons white vinegar and left to sit for 5 min
  • 2 ½ cups whole wheat flour
  • ¼ cup sugar or coconut sugar
  • 2 eggs
  • 3 tablespoons melted butter or vegan butter
  • 2 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • ½ teaspoon salt

Instructions

  1. Using our Vitamix blender, bend all of the ingredients together for 20 seconds on level 8, scrape down the sides with a rubber spatula, and blend again on level 8 for another 30 seconds.  

  2. Heat a medium frying pan on medium-low heat, add oil, and add a scoop of pancake batter. Cook until bubbles appear and the bottom is golden brown, flip and cook until the other side is golden brown. Repeat with the remaining batter. Top the pancakes with sliced bananas and drizzle with maple syrup. Makes about 10 pancakes.
