Whenever I have a fruit overload situation my immediate reaction is to bust out the popsicle maker – my apricot ‘situation’ was no exception, Apricot Creamsicles it was! We LOVE making our own popsicles at home, and the boys are always right in there helping.  There are so many reasons to make your own versus buying them at the store.



First, you save so much money!  I’m always shocked at how expensive frozen treats are.  And second, you have full control of what goes in them.  No need for food dyes or excess sugar.  And last, you can be SO creative!  There aren’t many rules when it comes to making your own popsicles.  I plan on doing a round up of my favs that I’ve posted over the years to help put them in one place for you.

Our friend Katherin dropped off the most gorgeous bag of fresh apricots that had just been picked off of her tree and we wasted no time putting them to good use.  We made this stunning Apricot & Cream Pie (vegan) for Jillian’s Blog that will be posted any day now (it was so good, can’t wait to share it with you!) and we decided to make creamsicles with a bunch of them.  All you need is a blender and a popsicle form with some sticks!

You can make these with peaches (definitely peel those with the same method below, peeling is optional for the apricots) or any other soft fruit you wish.  Even better, layer them with your favourite granola to make breakfast popsicles, your kids will feel like rebels and you can high-five yourself later!

Apricots are rich in carotenoids which are the precursor to vitamin A (for growth, development, vision and the immune system) and are rich in vitamin C (antioxidant) and fibre.  I like them a little bit under-ripe personally when they still are firm but to each his/her own.  They are awesome made into jam or frozen on a sheet pan and stored in a resealable bag for smoothies when they get a bit riper.

Apricot Creamsicles

Creamsicles get an Okanagan facelift with this fresh apricot version!  You can use any fruit you want of course depending on what is in season, all you need is a blender and your favourite popsicle forms!  You can skip the first step if you wish, you may just get a darker puree.  Use whatever yogurt you wish, dairy-free or otherwise!  You may need more or less yogurt depending on the size of your popsicle forms.

Prep Time 10 minutes
Total Time 10 minutes


  • 5 apricots
  • 1/3 cup peach, mango or apricot juice
  • 1 teaspoon fresh lemon juice
  • honey to taste (optional)
  • 1.5 cups vanilla or coconut yogurt


  1. Prepare a medium bowl of ice water and bring a small pot of water to a boil. Submerge the apricots for 30 seconds and immediately place them in the ice bath.  The skins should peel off easily with your fingers.  

  2. Cut each apricot in half and remove the pits.  Place the apricots along with the juice and lemon juice and blend on high until smooth.  Taste the puree and add honey to sweeten to taste if desired, blending after the addition of honey if you add it.

  3. Layer the apricot puree with the yogurt in the forms until they are full, being careful to work any bubbles with a chop stick or butter knife.  Place the sticks in your form and freeze for 3-4 hours or until completely frozen.  Run the bottom of the forms under hot water to help release the popsicles and enjoy!
