Summer is only a few days away and one of my favourite activities to do with the kids is head outside for a picnic! These 18 recipes are the only excuse you need to grab a picnic basket and blanket, and head to the park.

Summer break is just around the corner (thank the stars) and with the boys out of school I’m always looking for new activities to do with them. A picnic gives us the opportunity to enjoy the hot summer weather outdoors and do what we do best – eat good food!
We rounded up 18 picnic worthy recipes so that you can take your pick, or even let the kids help decide what menu they want for your picnic. Check out the printable picnic packing list so you don’t leave home without the important stuff!
This Creamy dill potato salad is super simple to make and has a few less calories than your traditional potato salad thanks to the addition of Greek yogurt. It is packed with dill and crunchy celery and will be sure to become a picnic staple (be sure to keep it cool).
2. Crispy Tofu Salad Rolls 
Easy to make in advance, these Tofu Salad Rolls are light and refreshing with the most addictive peanut dipping sauce for your afternoon outside. Try adding different vegetables like red peppers for new flavour variations!

4. Lettuce Wraps 
Make the filling ahead of time and pack a head of iceberg or butter lettuce and you have the perfect light and refreshing lunch for your picnic! As an added bonus, the kids also enjoy getting to assemble their own wraps which means everyone is happy!
5. Creamy Cashew Cheese Spread 
This quick spread is packed with healthy unsaturated fats thanks to the cashews and is best served with crackers or carrot sticks!
Not only is this salad gorgeous to look at, but it’s loaded with vitamin C, potassium, and fibre thanks to the apricots in it. These nutrients will have you playing in the sun all day.
7. Roasted Zucchini Hummus 
Why make regular hummus when you can sneak an extra veggie in there? This one is creamy and flavourful and made in a mini food processor or blender – and gluten free and vegan of course!
8. Creamy Avocado Pesto Pasta Salad 
It only takes 3 simple steps to whip up this creamy avocado pesto pasta salad and it’s a crowd favourite around our household!
9. Rainbow Roasted Veggie Sandwich 
Sandwiches are one the very best grab and go foods and this one is full of colour! Let the kids help you assemble this one so they can choose their favourite veggies to add.
10. Chickpea Feta Salad 
With less than 10 ingredients and 1 step of instructions, this salad can easily be made in advance. The chickpeas also pack in some protein to your picnic.

When it’s time for dessert, these tequila lime cheesecake bites are certainly a treat! You can also try these vegan  for an even healthier version, OR of course leave out all of the alcohol for a kid-friendly simple lime version!

These lunchbox oat apple bars are definitely picnic worthy but are also awesome for when the kids have friends over. They’re nut free, vegan, and can easily be made gluten free for kids with allergies!
Gluten free (there is an option to make them ‘regular’), crunchy and sooo yummy, our crew is in LOVE with these! OR try these Old-Fashioned Coconut Oatmeal Cookies  (with a vegan option) that we can’t stop making!
15. Okanagan Cherry Oat Bars 
It’s cherry season here in the Okanagan and I love being able to incorporate fresh produce into my baking. This sweet treat is the perfect use for all those fresh cherries and also happen to be vegan with a gluten free option.
16. (Vegan) Rice Krispies 
Weakness alert! A staple childhood treat, Rice Krispies are so nostalgic to me! I remember when my mom used to let me lick the spoon after I helped her stir the big gooey mess. This treat is sure to please when you pull it out of your picnic basket and of course it is one of the quickest things to make!
17. Apple Greek Yogurt Cake 
A moist cake is topped with a thick layer of soft apples and finished with a perfect crunchy oatmeal crumb. Guaranteed to make you the most popular person at the picnic.

If your kids wouldn’t sit still long enough to get a bite to eat at your picnic, these sneaky mommy muffins are the perfect way to add some vegetables into their day! We make these almost weekly and they freeze beautifully!
